Quick Chicken Teriyaki Bowls

So I'm outside with the kiddos and started thinking about a meal I made last week when I was short on time. It was a basic chicken stir fry with fresh veggies, rice and Teryaki sauce. I love stir frys, anything Mexican, soul food and well everything I'm a true foodie. Well back from my rambling lets get to cooking.

Ingredients

1 lb thin boneless chicken breast, cut into strips
1 Zucchini, sliced and cut crosswise
Bag of matchstick carrots
1 Broccoli crown
1 cup of Teryaki sauce
Brown rice, prepared


Add chicken to oiled pan heated to medium high heat. Season chicken with garlic powder, pepper and chicken seasoning. continue cooking for 5 to 7 minutes until chicken is near done. Add zucchini, broccoli and carrots continue to cook on low, stirring frequently until vegetables are deep colored and crispy. Add Teriyaki sauce and stir to blend. Serve over rice.

Easy Skillet Chicken

Easy Skillet Chicken


So this recipe is inspired by Kraft cheesy chicken recipe. This is a great meal for nights when your low on time. With a cook time under 20 minutes and only a few ingredients this dish is always a winner in my home.

Ingredients

1lb thin Boneless skinless chicken breast
1 Broccoli crown, chopped
1 Can of cream of chicken soup
4oz Velveeta cheese, diced
Brown rice (cooked and prepared)


Season chicken breast with garlic powder, pepper and chicken seasoning. Heat skillet to medium heat with oil. Cook chicken on each side for 5 to 7 minutes or until near done. Add chopped broccoli, cream of chicken soup, and diced Velveeta cheese to skillet and mix together. Cook on low until cheese is melted, broccoli is cooked and chicken is done. Serve with warm cooked brown rice.


4 servings 

Fresh Start Smoothie

This is your basic, nothing fancy starter smoothie. It fills you up and it has a whippy texture.


Ingredients

16oz  bag of frozen sliced strawberries
1 banana
2 cups of orange juice
Scoop of vanilla flavored protein powder

Combine all ingredients in blender. Blend 30 seconds on high and 30 on medium. Enjoy.

Herbs Fact Guide

So like always I'm multitasking, looking over at my son while he is doing his math homework, and watching my daughter during her gymnastics practice...and gathering some fun herb facts to keep handy this gardening season.

Basil 

  • Summer growing season
  • 12 weeks harvest period
  • Popular in Italian dishes
  • Pinch basil often to keep the plant bushy
  • For tasty plants remove bud as they appear

Chive

  • Late spring/Summer growing season
  • 16 weeks harvest period
  • Chives are part of the onion family
  • Snip the tips of leaves to use as garnish for baked potatoes
  • Insufficient water can cause brown tip

Cilantro

  • Late spring/Summer growing season
  • 5 weeks harvest period
  • Cilantro tends to look like parsley.
  • When cilantro goes to seed it becomes another herb...coriander
  • Coriander harvest period is 12 weeks
Mint
  • Spring, Summer and Fall growing season
  • Its a perennial
  • Only needs to be watered weekly
  • Use the leaves as a flavoring and sprigs as a garnish
  • Mint is invasive and grows out runners that will pop up throughout the garden

Oregano

  • Spring, Summer and Fall growing season
  • 16 weeks harvest period
  • Only needs to be watered weekly
  • Oregano is great with tomato and rice...dried and fresh
  • The flavor is stronger when dried.

Chicken BLT Salad

So now is that time of the year when salads are in the weekly rotation. I just love creating new salads or seeing ideas on pintrest, Kraft and Taste of home. Sometimes I just like to freestyle with whatever I have in the house. There is nothing like a BLT in the summer crisp clean lettuce, juicy sweet tomatoes and the crunchy salty bacon. Yum... So lets bring it up a notch by adding chicken and making it a salad. 




Ingredients 

1lb of thin boneless chicken breast
Garlic powder
McCormick chicken seasoning 
2 Hard boiled eggs
romanie lettuce
Real bacon pieces
Cherry Tomatoes
1/2cup of chopped red onion
1/4 of mozzarella cheese block


Season chicken - sprinkle with garlic powder, chicken seasoning and black pepper. Bake at 375 degrees for 25 minutes. Let cool for 10 minutes. Slice thin.

Meanwhile add lettuce, tomatoes, onion, chopped up cheese pieces, bacon and sliced egg in large bowl and top with chicken.

Fruit Salad

I know its still not that time, but my family loves fruit. So fruit salads... here we come. I look at it as being one less sugary or salty snack for the kids. This is a plain fruit salad, but you can add sweeteners or dressings if you like. I just prefer my fruit salads kept as natural as possible, I think we tend to sweeten everything and forget about the pure taste. So I bought this melon baller and enjoyed using it on the melons. I need more practice and my husband thought it looked like a lot of work. But all in all I enjoyed the process and making these cute little balls.

Ingredients 

1 watermelon
1 honeydew
Bunch of red grapes
2 mangoes


cut and mix ingredients together. Best served cold.



Simple Lemonade

If you love beyonce like me, then you have been listening to her new lemonade album night and day. Which gets you in the mind for some good fresh old fashioned lemonade. I mean it doesn't get any easier right? Ugh wish me luck I'm really trying to get a lemon tree. So lets carry on to the brighter side. HaHa


Ingredients 

8 lemons juiced
1 Cup of sugar
Water





Juice lemons add to a 2 quart pitcher. Mix in sugar. Fill with water. 

Add lemon slices and ice. (optional)
