Ingredients
· 2 Tbsp. Extra Virgin Olive Oil
· 1 Tbsp. Lemon Juice
· 1 Tbsp. minced Parsley
· 1 Tsp. minced Garlic
· 1 Tsp. dried Basil
· Salt and Pepper to taste
· 4 Tilapia fillets
· 1 large ripe Mango, peeled, pitted and diced
· ½ Red pepper, diced
· 1 Tbsp. Red Onion, minced
· 1 Tbsp. chopped fresh cilantro
· 1 Jalapeno pepper, seeded and minced
· 2 Tbsp. Lime juice
· 1 Tbsp. Lemon juice
Directions
1.
Preheat oven to 375.

While oven preheating lightly oil
baking sheet with olive oil.

Season Tilapia with lemon juice,
parsley, garlic, basil, salt and pepper.

Bake until done. (flesh white, flakes
easily with fork)
5.
While fish is in oven prepare salsa.
6.
Combine mango, red pepper, red onion,
cilantro and jalapeno pepper in bowl. Add the lime and 1 Tbsp. of lemon juice,
and toss well. Season to taste with salt and pepper, refrigerate until fish is
done baking.
7.
Serve the tilapia topped with the
mango salsa.
